Sausages and beans
Ingredients for 4 servings: dry beans (cannellini or borlotti) 400 g, sausage 4, 1/2 onion, white wine 15 cl, salt to taste, pepper as needed, 1 clove of garlic, tomato sauce 400 g, extra virgin olive oil n.B.
Prepare the beans by soaking them the night before. Boil them in water with a little salt for about 1 hour and bring them to a boil (you can add bay leaf, rosemary or other flavors to taste better).
In a saucepan, sauté the chopped onion with water, a dash of olive oil and a pinch of salt.
When the water is over, add the whole sausages and the garlic clove to the onion. Brown them and blend with the wine.
Add the beans and tomato sauce. Add salt and pepper as needed.
Cook over low heat for at least 1 hour (if it dries too much, add hot water).
